This cold soup is often served in Yangyang, Gangwon-do, where it is known as “Jjaebok Mulhoe.” “Jjaebok” refers to venus clams harvested at the East Sea, which also comes from its small size and supposed ugliness. Its flavor cannot be denied, however: There is hardly any fishy smell, the meat is chewy and springy, and the taste is quite clean. Boiled venus clam meat is put on a bed of julienned and thinly sliced vegetables like lettuce, carrot, and cucumber, and a spicy cold soup is poured on top.
