This dish, featuring pork belly double-grilled on a briquette to imbue the meat with the fragrance of a grill, is known among the people of Suncheon as “Yeontan Gungogi.” Pork belly is first grilled over a strong briquette fire to burn away the odor and then returned to the grill for the second time with a thin coating of red chili paste–based sauce. One has to be deft so that the sauce does not burn. When the sauce comes in contact with high temperatures, that permeates the meat with a unique scent of fire. Get some hooker chive salad on top of the meat, and one can have the otherwise fatty meat without stopping.
