Half-dried saury

This half-dried saury is a local specialty enjoyed in winter. Saury, or sometimes called herring, is dried in the sea breeze for approximately ten days. The texture is tender and chewy and the fish tastes rich as the flesh has sufficient oil. The half-dried saury (or herring) is dipped in red chili paste with vinegar or wrapped in seaweed or dried laver.
