Baesuk: A Refined Delight from the Royal Palace
Baesuk, a traditional Korean beverage, has long been enjoyed in the royal palace. Originally known as “winter hwachae (punch),” this refined drink was traditionally served cold. However, when enjoyed warm, Baesuk also warms the body, making it a perfect winter beverage.
The drink is also known as Baesujeonggwa (Pear Cinnamon Punch), as the recipe replaces the dried persimmons with pear, which is then added to ginger tea. According to court records, Baesuk is made with five key ingredients: pear, pine nut, black pepper, ginger, and honey.
The preparation process is both intricate and delightful. The pear is first studded with black pepper and boiled in honeyed water with ginger, while pine nut is used as a garnish. The result is a luxurious drink that beautifully balances the spicy fragrance of ginger and black pepper with the sweetness of the pear.
Interestingly, a similar dish can be found overseas in the form of a fruits compote, showcasing the universal appeal of this unique Korean beverage.
