This Gangwon-do folk dish is a spicy fish stew made with floating goby. It is known as “Ttugeori Tang” and “Kkukjeogu Tang.” Floating goby is a freshwater fish that lives close to riverbeds. It is first cleaned and boiled down, then red chili paste, green chili pepper, and other spices are added to the soup. Other variants of this dish include dusting the floating goby with flour to thicken the soup or adding hand-pulled dough to the soup. Unlike other freshwater fish, floating goby has a clean taste unmarred by fishy odor. The soup is spicy and refreshing.
