Red Bean Paste Jelly

This delightful dessert is made by simmering red bean paste, which is created from boiling red beans, with agar and sugar. Agar, a type of seaweed, must be soaked before use. First, the agar is boiled and then sieved through a fine mesh. It is then combined with the red bean paste and sugar, and the mixture is brought to a boil. After simmering the concoction and adding starch syrup and salt, it is poured into a frame and left to cool. Once the jelly has completely congealed, it is removed from the frame and sliced into bite-sized pieces.

Red Bean Paste Jelly is distinguished by its firmer, more elastic texture compared to pudding, as well as the rich, satisfying flavor of the red bean paste. This traditional Korean dessert is a true delight for the senses, with its vibrant color and delicate, yet indulgent, taste.
