This tea is made by simmering dried jujube berries in low heat, drawing out the gentle sweetness and taste of jujubes. Jujube Tea is famous for its beneficial effect on sleeplessness and stress. To make this tea, dried berries are washed cleanly and simmered for more than an hour with pear or ginger. Another way to enjoy this beverage is to make a concentrate, which also preserves it. Here, water is added to twice the amount of jujube used, the berries are left to simmer, then the seeds and rind are sieved. The water is boiled down to create the concentrate. One can also add a dash of honey to sweeten the beverage.
