This is a folk dish featuring deep-fried whole sentinel crabs originating from the coastal regions of Jeollanam-do. Sentinel crabs are no larger than a single phalange. They are usually found in tidal flats and were often served in salads, marinated in soy sauce, deep-fried, battered and pan-fried, or in kimchi in fishing villages across the area. The sand is cleaned from the sentinel crabs and then deep-fried to create a crispy and rich dish. Sentinel crabs can be eaten whole, which allows one to enjoy the full benefits of chitosan in the shell. Suncheon, where sentinel crabs can be found in abundance, also sells Sentinel Crab Bread, a bread made with powdered sentinel crab in the dough.
