Hobakgoji Rice Cake

This rice cake is made with a mixture of sweet rice powder and dried pumpkin, which is topped with powdered mung beans and steamed. It is a folk dish of the Chungcheongbuk-do region. In comparison to its more well-known sibling, Sirutteok (Steamed Rice Cake), it uses powdered mung bean rather than a powdered red bean. “Hobakgoji” refers to thinly-sliced and dried pumpkin. It is either soaked and made into a salad or used in rice cake. Sun-dried pumpkin is rich in vitamin D, which makes it effective for osteoporosis. Its rich fiber content also helps with weight loss. The rice cake itself is soft and sweet, so it has something for everyone.
