Momma’s Delightful Tteokguk (떡국)

Sliced rice cakes are boiled in a rich beef broth and served with stir-fried minced meat and topped with strips of pan-fried eggs. Koreans eat this soup on New Year’s Day. Depending on the region, seafood broth made with anchovies, etc. are used instead of the beef broth.
