Flat Dumpling: A Unique Daegu Delicacy
As its name suggests, the Flat Dumpling is a unique local dish from Daegu, South Korea. Contrary to the typical round shape of dumplings, this one is made in a half-moon shape, filled with sliced glass noodles and leeks in a thin broth. The visual appearance may not fit the traditional dumpling concept, but it is a beloved delicacy among the people of Daegu.
The Flat Dumpling is one of the 10 Daegu delicacies that represent the city’s rich culinary heritage. These include Daegu Rice and Soup, Grilled Tripe, Sliced Raw Bottom Round Steak, Dongindong Braised Galbi, Spicy Catfish Stew, Puffer Fish Bulgogi, Daegu Noodle Soup, Spicy Raw Fish Salad, Stir-fried Udon, and, of course, the Flat Mandu.
To enjoy the Flat Dumpling, the recommended preparation is to heat a cast iron plate, sprinkle it with green onions and red pepper powder, and then bake the flat mandu. Serve it with soy sauce on the side. The dish is not greasy, as it does not contain any meat, and it has a unique chewy and parched texture, with a light and savory taste.
