Bitter Lettuce Kimchi

This kimchi is made out of bitter lettuce, which is blanched beforehand to remove its bitterness. Bitter lettuce is often blanched or put into a salted water bath to draw out the bitter taste before cooking. Once the bitterness has been drawn out, it is tossed with garlic, ginger, salted seafood sauce, chili pepper powder, and other kimchi spices before being layered into an earthenware pot for fermentation. Once fermentation imbues the kimchi with a sour tang, lingering traces of bitterness come to the fore to create an appetizing harmony.
