Grandma’s Homemade Roasted Rice Cake Soup

Gubeun TteokgukThis dish, made with roasted rice cake from sweet rice powder, is a folk dish from Ulsan. The “Gubeun” part of the name comes from the Gyeongsang dialect pronunciation of “guun,” or roasted. It is also known as “Kkubun Tteokguk.” Generally speaking, one makes a Sliced Rice Cake Soup with a rice cake stick made from nonglutinous rice. However, one uses fresh rice cake made from sweet rice powder kneaded with warm water for this dish, which is then roasted. It is then sliced into the familiar shape for Sliced Rice Cake Soup and boiled with oysters, beef, and other ingredients. Because it is often enjoyed in Gyeongsangnam-do, a region rich in seafood, Gubeun Tteokguk is often made with fresh oysters. This creates a refreshing soup that brings the richness of roasted sweet rice to the fore.
