This is a rice cake made from a dough featuring sweet rice powder, soybean, chestnut, jujube, and red beans. It comes from the Chungcheong-do region, where it is also referred to as “Modubaegi” or “Modeumbaek.” The name “Soemeori Chaltteok” comes from its appearance, which is said to resemble Boiled Beef (“so”) Head (“meori”) Slices. True aficionados are said to wait for the rice cake to harden so that it can be cut into slices and roasted for even more flavor. Glutinous rice is soaked overnight, then ground finely. Then, fillings such as chestnuts, jujube, and beans are prepared, mixed with the other ingredients together into a dough, and steamed. The rice cake part is sweet and chewy, while black soybeans and jujube add richness and sweet notes.
