In Goseong, Gyeongsangnam-do, Goat and Rice Soup is known as Chongjaengi Gukbap. The dish is reminiscent of the clear Beef and Rice Soup because goat meat is boiled down into a clear broth, where vegetables like bean sprouts, garlic, and green onions are added. The name of the dish, “Chongjaengi Gukbap,” is said to come from a matron of a hunter (chongjaengi) household who used to serve the dish from a large cauldron. The soup is refreshing and savory, while the meat is plump and chewy. Another option is to enjoy the soup with Goat Bulgogi.
