This healthy soup is made by simmering beef ribs and bones for a long time. The flavor features the harmony of the soup and the meat, emphasizing the rich and clean aftertaste. First, the beef ribs are submerged in cold water for two to three hours to draw out the blood and brought to a rolling boil for parboiling. Second, the parboiled ribs are placed in a pot with radishes, green onions, garlic, and other aromatics and simmered for 30 minutes to 1 hour. The point is to start with a strong fire, then reduce to medium. Third, once the meat is fully cooked, all solids are removed, and the fat is skimmed off. Fourth and last, the meat is added back to the soup, flavored with minced garlic and salt, and then topped with chopped green onions. Generally, one often starts with the galbi first and then finishes with a bowl of steamed rice mixed into the soup, but one can have glass noodles and other addition to the soup itself. It is a great pick-me-up, especially when one feels weak.
