Kimchi Soup: A Comforting Hangover Cure and Delicious Porridge

Kimchi soup is a versatile and flavorful dish that can be enjoyed for more than just its traditional uses. One of the reasons it’s so popular is its ability to provide a refreshing and soothing taste, even when you’re feeling under the weather.

When boiled with ripe kimchi and bean sprouts, kimchi soup can be a great hangover cure. The bold flavors and refreshing qualities of the dish can help revive your senses and settle your stomach.

But kimchi soup’s versatility doesn’t stop there. If you add rice to the mix and let it boil slightly, you’ll end up with a delicious kimchi and rice soup that’s easy to eat and incredibly satisfying.

Another variation on this theme is kimchi porridge, a local dish from the Gyeongsangbuk-do Province. This comforting meal was originally made with famine supplies during the cold winters of the 1970s, when rice was considered a precious commodity.

To make kimchi porridge, simply put cold rice in kimchi soup and boil it like a traditional porridge. Then, add a hint of soybean paste, sweet potatoes, and hand-pulled dough to increase the heartiness and flavor. This dish has become a beloved comfort food for many Koreans.
