This traditional dish is made by julienning beef, then braising it with various condiments. It is also known as “Ttokttogi Jaban.” The name of this dish comes from how the beef is cut into matchsticks, then given a salty flavor by braising with soy sauce. It was a beloved feature of the royal table in the past when it was used as a filling for wraps. Julienned beef is flavored with soy sauce, sugar, minced garlic, green onions, and sesame oil before being braised. The rich flavor of beef, salted to perfection with soy sauce, makes it a perfect condiment to be used in bibimbap, fried rice dishes, or gimbap.
