This seafood kimchi is made with thinly sliced and parboiled abalone, salted with saltwater, and flavored with thinly sliced citrus peel, pear, chili pepper powder, and radish. It is often made in the Jeju region as a specialty dish made during the fall. Dried abalone is scored, while fresh abalone is parboiled before use. The ingredients are flavored with radish, pear, citrus, scallion, garlic, ginger, salt, and sugar, layered into the container for kimchi, and left to ripen in a cool place.
