“A Vibrant Slice of Summer: Yellow Cucumber Fresh Salad (노각생채)”

Yellow Cucumber SaladThis dish features the salted flesh from yellow cucumber, sliced thinly and tossed in red chili paste with vinegar. Yellow cucumber refers to a fully-grown cucumber, whose hull is yellowed and flesh hardened. It is ideal for salads and pickles, where its crunch truly shines. They are quite easy to come by in late summer. When peeled and tossed with red chili paste with vinegar, it makes for a great dish to whet one’s appetite in the summer heat. When lightly pickled in salt, its texture becomes even more springy and can then be put in a bibimbap.
