Jokpyeon: A Captivating Korean Delicacy

Jokpyeon is a unique and intriguing Korean aspic dish that has captured the hearts and palates of many. This delectable creation is made with a combination of ox feet, jujube, manna lichen, and chili threads, resulting in a visually stunning and flavorful experience.

The name “Jokpyeon” is derived from the fact that its slices are said to resemble traditional Korean rice cakes, earning it the additional monikers of “Jokbyeong” and “Gyobyeong.” This delicacy has a rich history, having been enjoyed in both royal court banquets and among the common folk.

The preparation of Jokpyeon is a labor of love. The ox feet are boiled, and the deboned meat and beef shank are chopped and mixed with salt, black pepper, and ginger juice, then boiled again. The resulting mixture is poured into a cuboid container and garnished with pine nuts, chili threads, egg threads, sliced jujube, manna lichen, and black sesame. The dish is then chilled until it congeals, creating a unique and visually appealing presentation.

Jokpyeon can be served with a dipping sauce made from a combination of soy sauce and vinegar or mustard, adding a delightful contrast to the savory and slightly sweet flavors of the aspic.
