Mussels Braised in a Savory Broth

HonghapchoThis dish is made by braising mussels in a soy sauce-based sauce. Its sweet and salty flavor makes it a great side dish. “Cho” of the Korean name for this dish, “Honghapcho,” refers to a cooking method of braising in soy sauce. The sauce is made with soy sauce, sugar, green onion, garlic, starch, ginger, black pepper powder, sesame oil, and sesame seeds. Mussels are cleaned first, then parboiled in salt water. Then, the sauce is brought to a boil, and mussels are added and then braised while stirring. Once the sauce is reduced, starch and water are mixed to add a sheen to the dish and then finished with sesame oil and powdered pine nuts.
