Sliced Raw Roundnose FlounderThis dish is often served in Yeongdeok, a city on the East Sea. Roundnose flounder is a specialty of Yeongdeok and the focus of a local annual festival. In Yeongdeok and the greater Gyeongsang-do area, it is called “mijuguri.” Mijuguri is a fish well-suited for raw slices, thanks to its clean flavor and tender texture. Its bones are tender enough that they can be eaten whole. Sliced Raw Roundnose Flounder is served as a salad, flavored with red chili paste with vinegar and mixed with julienned cucumber, pear, water parsley, and radish. The resulting taste is sweet and sour with a rich note.
