“Delightful Twist on a Seafood Classic: Crunchy and Savory Braised Half-Dried Pollack”

Kodari

This dish is made by cutting half-dried pollack into bite-sized pieces, tossing in starch, deep-frying until crisp, then glazing with sauce. “Kodari” refers to half-dried pollack. The dish is similar to Dak Gangjeong (Deep-fried and Braised Chicken) in appearance, but its flavor is very different: Half-dried pollack makes this dish crispier and chewier than the ones made with chicken. The flavor is quite gentle, spiced with sweet and spicy notes from the sauce. Half-dried pollack is low in fat and calories, so it is ideal for weight loss. Its high amino acid content helps to protect one’s liver.
