“Savoring Autumn’s Warmth: Curled Mallow Soup (아욱국)”

Curled Mallow and Soybean Paste Soup

This soup is made with curled mallow and soybean paste. Curled mallow is a common summertime vegetable and a popular ingredient for soybean paste soup. Soybean paste is stirred into the water rinsing the rice, added to dried shrimp, and then brought to a boil. Next, green onions, garlic, and curled mallow are added and then continued to be boiled. The list of ingredients and the recipe are both quite simple, but the result is a soup that is universally beloved across Korea. Rich soup and tender curled mallow help to calm one’s stomach and assist in one’s digestion. Curled mallow is rich in calcium and protein and has beneficial qualities for detoxification and constipation.
