Gangjeong: A Delightful Korean Confectionery Delight

Gangjeong is a type of traditional Korean confectionery that has been enjoyed for generations. This delectable treat is made with rice powder, and its variant, Bapgangjeong, is crafted using leftover steamed rice. The key to creating the perfect Bapgangjeong is ensuring the rice is not too starchy and is thoroughly dried before being deep-fried.

The process of making Bapgangjeong begins with laying the dried rice in a thin layer on a plate and exposing it to the sun’s warmth. Once the rice is sufficiently dried, it is then deep-fried in oil and drained. Next, a sauce is created by simmering malt syrup, sugar, and water in a pan until it thickens. The deep-fried rice puffs are then mixed with this delectable sauce, and sunflower and pumpkin seeds are added to the mix. Finally, the coated rice puffs are laid out on a tray, left to cool, and then shaped into bite-sized balls.

The result is a sweet and rich treat that perfectly balances the crunchiness of the rice puffs with the nutty flavors of the seeds. Gangjeong is a true delight for the senses, and its unique preparation process makes it a cherished part of Korean culinary heritage.
