“My Delightful Discovery: Dried Sweet Potatoes (고구마말랭이)”

Sweet potato sticksSweet potatoes served as a valuable famine food in the past, especially in the depth of winter. However, they are now used in various dessert dishes. To make this dish, sweet potatoes are first steamed, cut into matchsticks, then scattered on baking paper. They are then left to dry for three days in the shade with plenty of air circulation, drying the sticks on the outside while keeping inside moist. Another way to do this is through a food dehydrator, which takes about one day and creates sweeter, more chewy sticks. These sticks can then be frozen for longer storage.
